Chocolate Devil’s Food Cake is a very popular dense rich chocolate dessert that was created in the United States in the early 1900s. Usually, the recipe for this cake is quite different from other chocolate cakes, like German Cake, due to its specific characteristics.
One of the differences will be an extra rich chocolate flavor, which is enhanced by an additional ingredient, like brewed coffee or instant espresso powder. Traditionally, this cake was made with unsweetened baking chocolate. However, modern recipes lean towards using unsweetened cocoa powder, which lacks of cocoa butter, results in even more enhancing of chocolate flavor. In addition, this cake is usually paired with dense and rich chocolate ganache that makes this Devil’s Food Cake a real “sinful” indulgence for chocolate enthusiasts.
It is quite easy to make this Devil’s Food Cake at home. Before starting to bake the cake, I prepare chocolate ganache, as it takes about two hours for it to set and get the right consistency.
To prepare the batter, I like to use my Kitchen Aid stand mixer. It makes the whole process quick and easy. All you need is to combine all the ingredients together according to the recipe. You will notice that the batter comes out more liquid than usual, but that is a perfect consistency that will make your chocolate cake moist. Divide the batter between 3 9-inch baking pans and bake for about 30-35 minutes. When the cake is ready, it should spring back when you lightly press on the top. Let it cool off completely before assembling the cake.
