How to make Ganache:
  1. In a saucepan, heat up heavy cream until it starts to simmer.
  2. Put chocolate chips and powdered sugar in a mixing bowl, pour the hot cream over and whisk it until smooth consistency. Cover with plastic wrap and put it on the side for two hours to set.
How to make Chocolate Cake:
  1. Preheat the oven to 350°F, grease 3 9-inch cake pans and set aside.
  2. In a mixing bowl, sift together all-purpose flour, cocoa powder, baking soda, baking powder, and salt, and set aside.
  3. In a saucepan, mix together brewed coffee and milk, heat it up until it starts to simmer, then set aside.
  4. In a standing mixer, using a paddle attachment, cream together unsalted butter and granulated sugar for a few minutes until it is light and smooth. Add eggs and vanilla extract and mix until well combined.
  5. Add half of the coffee/milk mixture along with half of the dry ingredients and mix until combined. Add the remaining coffee/ milk mixture and dry ingredients and mix it again until smooth consistency.
  6. Divide the batter between 3 cake pans and bake at 350°F for about 30-35 minutes or until a toothpick inserted in the middle comes out clean. When it is baked, remove the cakes to a wire rack and let it cool completely.
  7. To assemble the cake, put the first layer on a cake platter and spread over ¼ of the chocolate ganache. Repeat the same with the 2nd layer. Place the 3rd layer on top and spread the remaining ganache on top and on the sides.
  8. Refrigerate for a couple of hours to set before serving.
