I am one of those people who doesn’t eat all my vegetables for dinner, or as I would say, some particular vegetables. Zucchini used to be one of them from my long list of “I don’t like it”, which I just refused to eat.
On the other side, my fiancée loves them all. But because I’m the one who cooks in the family, his vegetable plate is missing the variety he enjoys. I can tell you many stories on how he tries to trick me into cooking him sautéed mushrooms or boiled spinach. But sorry everyone, I don’t think you will ever find a recipe on my blog with mushrooms. Recently, I had a chance to try a chocolate zucchini bread from a local bakery that really surprised me with its aroma, soft texture, and the most importantly, the taste. It was packed with zucchini but all I could taste was the luscious chocolate bread, packed with crunchy walnuts inside. I couldn’t taste or see any vegetables though I knew there were plenty inside. This was a tasty trick!
This experience paved the way for me to finally start appreciating veggies and incorporating them in my meals.
Last week was my first try in making these healthy muffins, and incorporating ingredients that I normally wouldn’t use in my baking. Like a child, I was sitting in front of the oven, staring through the glass and making sure they’d rise well. They did!
It is astonishing how well these healthy ingredients work in baking. While we’re all accustomed to adding vegetable oil in our chocolate cakes or muffins, coconut oil does the same job. To sweeten the muffins, I used a mix of brown sugar and honey. However, you easily can substitute brown sugar with coconut sugar to reduce the calories. All-purpose flour also can be switched to whole wheat flour or gluten-free flour. You can easily adjust the ingredients according to your diet.
I also like the simplicity of this recipe. All you need is a mixing bowl and a fork. Just combine all the ingredients together, bake it, and these Healthy Chocolate Zucchini Muffins are complete.
You will be nicely surprised that they taste just like regular chocolate muffins and you don’t have to feel guilty about eating them. Healthy baking can be easy and tasty!
