I am so happy the summer is almost here and we can enjoy the first veggies and berries that are in season now. To celebrate it, I decided to make a Strawberry Shortcake. I think this is the best cake I’ve made so far! Just look at these pictures, I don’t even need to describe this beauty.
I used a classic recipe of sponge cake that has only 5 ingredients: eggs, sugar, all-purpose flour, baking powder and a pinch of salt. When you beat the eggs with sugar for about 5 minutes, they become very “fluffy” and creamy. Make sure when you add dry ingredients just fold it until incorporated and don’t overmix it, otherwise the cake will not rise and will be tough.
As we are making a 3 layer cake, you can bake it as one cake for about 30 minutes and then cut into 3 equal layers. Or you can divide the batter into 3 separate 9-inch baking pans and bake it separate for about 18-20 minutes. In this case you won’t need to worry about cutting it into layers.
