I was always saying that Fall time is a cookie time. When it’s starting to get cold outside, it’s a perfect time to stay in your pajamas in your cozy kitchen and bake some delicious sugar cookies. Especially if they are inspired by this beautiful season theme.
Just the smell of these tasty vanilla sugar cookies will make your mouth water. They are perfectly crispy outside and soft inside. By the way, these cute homemade cookies will be a great present for your friends or family when you visit them during the holiday season!
Feel free to play around with different shapes and decorations. After all, it is all about having a good time and enjoy the festivities. I used classic royal icing to decorate my sugar cookies. There are so many different techniques on how to make royal icing, including different tricks on its consistency. Here at royal icing recipe you can find my favorite video with additional information that will help you to decorate your cookies.
There are some notes that I have to mention:
First, it is important to chill your dough before baking cookies. It will prevent your cookies from spreading and will help them to keep their shape.
Second, when you roll out the dough it will be a bit sticky. You can use a little bit of flour to prevent it from sticking to a roller or a counter. However, I have a different trick that always helps me. Put the dough between two sheets of parchment paper, then roll over the paper. The paper will keep the dough smooth and will not stick.
Third, after you cut the cookies and put them on the baking sheet, put the sheet with the cookies back in the fridge for 10 minutes to chill. The reason I do it, is because while you are working with the dough it warms up. Chilled dough will help your cookies to keep their shape.
Forth, I usually make my cookies 6-7 mm thick and bake them for 9 minutes. When you take them out of the oven, they will be very soft at first and look under-baked. But trust me, they are perfectly baked. After they cool off they will have a light crisp outside while remaining soft inside. If you like your cookies more crumbly, you can bake them 1-2 minutes longer. Though remember, they will be drier than usual.
Fifth and finally, I always decorate my cookies with royal icing which gives more sweetness. That is why I use less sugar in the recipe. If you are not going to decorate them, you can use 1 cup of sugar instead of 2/3 cup.
