Pasta e Fagioli soup

Preheat a large pot with olive oil, add chopped onion and cook for about 10 minutes, or until it’s softened and caramelized.

Add ground beef, break it down into smaller pieces and cook for about 7 minutes or until it’s cooked through with no pink color remaining.

Add carrots and stir in. Then add crushed  tomatoes.

Add kidney beans and great northern beans. Then pour in chicken stock and water, then stir.

Season with dried thyme, dried oregano, salt and pepper to taste.

Cook for 20 minutes, then add 1 cup of ditalini pasta. Cook for about 10 minutes or until it’s cooked al dente.

Add chopped parsley and stir. Serve with some freshly grated Parmesan Cheese.
