I think I just created my new favorite treat. Being a big fan of coconut and oatmeal, I decided to put them together and make cookies. That’s a win-win! They are soft, chewy, and have a great flavor.
I am not a nutritionist, but it is well known how these two ingredients benefit our health and skin. Oatmeal is full of fiber, protein and antioxidants that gives you energy, lowers cholesterol and improves your skin. Coconut is also rich with fiber and is packed with essential vitamins and nutrients.
These are still cookies and they include butter and sugar, which isn’t the best for you. Of course, you can make them healthier if you substitute butter with coconut oil, and sugar with honey or maple syrup. But I still love the delicious buttery flavor in my baked goodies, and just refuse to substitute to a healthier version.

That recipe came out to be quite popular and I didn’t want to change any of main ingredients but only flavor and texture.
