Spicy Roasted Chickpeas is a great healthy savory snack that is vegan and gluten-free.
One of my new favorite snacks are Spicy Roasted Chickpeas. They have a crunchy texture and nutty flavor. Needless to say, they are very addicting!)
For a very long time I wasn’t a big fan of chickpeas. I didn’t really know what to do with them or how to incorporate them in my recipes. The very first time I used them was in my Instant Pot Pilaf with Chicken and Vegetables. I was surprised as to how much texture they bring to the dish!
Soon after, I learned that you can actually roast chickpeas with different spices. Then it becomes more like a savory popcorn, that is very addictive but much healthier.
You can eat roasted chickpeas as-is or add it to different dishes, like Caesar salad (use it instead of croutons), or top your veggie Buddha bowl, or an avocado toast.
This super ingredient is very nutritious.
For me, I like to roast it with Cajun seasoning which makes it aromatic and spicy.
How to make Spicy Roasted Chickpeas crispy?
One of the most important steps to make chickpeas crispy is to make sure you dry them before baking.
First, we need to drain chickpeas from the liquid and rinse well.
Put a piece of paper towel on a plate and place rinsed chickpeas on top. This way the paper towel will absorb most of the water. You can pad dry it or let it air dry for about 30 minutes.
If you skip this step, your chickpeas will come out soggy instead of crispy.
How to make Spicy Roasted Chickpeas
After the chickpeas are dried, put it in a bowl, add olive oil and mix.
Then place in a baking sheet and bake at 400°F.
After 20 minutes of baking, take them out and season with salt and Cajun. I like to put them back in the same bowl we used to mix it with olive oil, putting the spices in and mixing again.
Then put them back in the oven and bake for another 5-10 minutes.
It’s better to eat roasted chickpeas while still warm and crispy. When cooled off, it loses the crispiness. If it happens, you can just reheat in the oven for a few minutes.

Ingredients
- 1 can chickpeas 15 oz
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon Cajun spice
Instructions
- Preheat the oven to 400°F.
- Rinse and drain the chickpeas in a strainer.
- Dry the chickpeas, using paper towels or air dry.
- Toss the chickpeas with olive oil, place in a baking sheet and bake at 400°F for 20 minutes.
- Take them out and season with salt and Cajun, mix. Then put them back in the oven and bake for another 5-10 minutes.
