Spicy Roasted Chickpeas is a great healthy savory snack that is vegan and gluten-free.

Ingredients

  • 1 can chickpeas (15 oz)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon Cajun spice

Instructions

  1. Preheat the oven to 400°F.
  2. Rinse and drain the chickpeas in a strainer.
  3. Dry the chickpeas, using paper towels or air dry.
  4. Toss the chickpeas with olive oil, place in a baking sheet and bake at 400°F for 20 minutes.
  5. Take them out and season with salt and Cajun, mix. Then put them back in the oven and bake for another 5-10 minutes.
