How to make French Vanilla Ice Cream

Step 1.
Pour the milk and heavy cream in a sauce pan. Add vanilla and salt. Bring the mixture to simmer over the medium heat.
Step 2.
Put the egg yolks and sugar in a mixing bowl and beat them very well. Mix them for a few minutes, until it becomes pale in color and will have a smooth and airy texture.
Step 3.
Gradually add hot milk mixture and whisk. Pour the tempered mixture back to the saucepan and cook it for about 10 minutes, or until the temperature reaches 170-175°F
Step 4.
Pour the mixture to a clean mixing bowl through a fine-mesh strainer. Let it cool off, then refrigerate for at least 2 hours.
Step 5.
Pour the mixture into the ice cream maker and churn according to manufacturer’s instructions.
