Ingredients

  • 1 cup all purpose flour
  • ¼ cup cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • teaspoon salt
  • 1 ripe banana
  • ¼ cup coconut oil, melted, room temperature
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cup brown sugar
  • ¼ cup honey
  • 1 cup shredded zucchini, squeezed from juices
  • ½ cup walnuts, chopped
  • 1 tablespoon all purpose flour
  • ¼ cup chocolate chips

Instructions

  • Preheat your oven to 350°F and line a muffin tin with 9 muffin liners inside. Set it aside.
  • In a medium mixing bowl, mix all dry ingredients together (All-purpose flour, cocoa powder, baking soda, baking powder, and salt). Set aside.
  • In another large bowl, using a fork, mix together a ripe banana, coconut oil, an egg, and vanilla extract. Add brown sugar and honey and mix again.
  • Add shredded zucchini (make sure you squeeze out the juices) and mix it until well combined.
  • Mix chopped walnuts with a tablespoon of all-purpose flour and fold it into the mixture.
  • Divide the batter between 9 muffin liners and sprinkle chocolate chips on top.
  • Bake at 350°F for 20-25 or until a toothpick inserted in the middle comes out clean.
