Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 28 oz peeled tomatoes I prefer San Marzano
  • 1 teaspoon dried oregano
  • ¼ cup fresh basil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • ¼ teaspoon red pepper flakes

Instructions

  • To start, we need to finely chop a yellow onion. Also, pour the peeled tomatoes in a large bowl and using your hands, crush them, taking out the tomato’s hard cores.
  • Then preheat a shallow heavy bottom pan over medium/high heat and add 2 tbsp olive oil.
  • Add the chopped onion and sauté for about 10 minutes, until it’s softened and golden color.
  • Then add 3 cloves minced garlic and stir for 1 more minutes.
  • Add the rest of the ingredients (28 oz San Marzano peeled tomatoes, 1 tsp dried oregano, ¼ cup chopped fresh basil, 1 tsp salt, 1 tsp sugar, and ¼ tsp red pepper flakes. Stir bring and bring to boil.
  • Then reduce the heat to low and let it simmer for about 30 minutes, occasionally stirring.

Notes

1. I would highly recommend to use San Marzano canned peeled tomatoes! They are the whole base of the recipe. Because they are less acidic, they make the sauce taste better!
2. Heavy bottom shallow pan is my go-to pan for two reasons. (Heavy bottom will prevent the sauce from burning, while shallow pan will make the simmering process faster.) If you don’t have such pan, use a regular large sauce pan. Just make sure you will stir the sauce more often and simmer it a bit longer.
3. Sauté the onion until it’s caramelized. It will provide more flavor and sweetness.
4. Always taste it while cooking. You might want to add more salt or sugar to balance the flavors.
5. How long does it last in the fridge? You can keep the sauce in a mason jar or an air tight container in the fridge for 4-5 days.
6. Can I freeze it? Yes! You can freeze it for up to 3 months! To thaw, just put it in the fridge overnight, then reheat it in a sauce pan.
