Ingredients

  • 1 cup whole milk warm, about 110°F
  • 2 ¼ teaspoons active dry yeast or 1 packet
  • 3 tablespoons granulated sugar
  • 4 tablespoons unsalted butter melted
  • 1 large egg room temperature
  • 1 ½ teaspoons salt
  • 3 cups all-purpose flour
  • 2 tablespoons unsalted butter melted, to brush

Instructions

  • In a stand mixer bowl, put 1 cup warm milk (about 110˚F), 2 ¼ tsp active dry yeast, and 3 tbsp sugar. Give it a stir and let sit for 3-5 minutes until it starts to bubble.
  • Then add 4 tbsp melted butter, 1 egg, 1 ½ ts salt, and half of the flour.
  • Using a dough attachment, mix it up.
  • Then gradually add the rest of the flour and continue mixing until combined. Knead for about 3-5 minutes.
  • Add 2 tbsp olive oil and grease the dough fro all sides.
  • Cover with plastic wrap or a towel and let it rise for about 2 hours or until the dough doubles in size.
  • When the dough is ready, grease a 9x13 inch baking pan and set aside.
  • Sprinkle a little bit of flour on the counter. Punch down the dough to release the air.
  • Transfer it to a floured surface. Roll the dough in a log, cut in 12 equal pieces and roll them into a ball shape.
  • Place them in a baking pan, leaving some space in between.
  • Cover with a clean towel and let rise for 1 more hour.
  • When ready, adjust the oven rack to a lower level and preheat the oven to 350°F.
  • Bake the rolls at 350°F for 20-25 minutes.
  • When the dinner rolls are ready, remove them from the oven. Brush them with melted butter for a shiny finish.

Notes

Milk. To activate the yeast, the milk should be warm, about 100-110°F. You can heat it in a microwave or on the stovetop. It’s better to use a food thermometer to make sure that it’s the right temperature. If the milk is too hot, it will kill the yeast.
Size. When rolling the dough balls, try to keep them the same size. That will help them to bake more evenly.
How to keep them fresh? After the rolls are cooled off, you can put them in an air tight container or a zip-lock bag. They will stay fresh on the counter for up to a week.
How to reheat them? You can reheat dinner rolls in the oven. Put them in the foil and bake at 350°F for about 10 minutes. The foil will prevent them from drying out.
