Ingredients

  • 4 flatbreads pita breads
  • cup pizza sauce
  • 2 cups fresh mozzarella cheese sliced
  • 2 cups cherry tomatoes or 3 large tomatoes
  • 1 teaspoon dried basil
  • ½ teaspoon dried red pepper flakes
  • 1 bunch fresh basil

Instructions

  • Preheat the oven to 425°F and line a large baking sheet with parchment paper.
  • Place the flatbread (pita bread) on the baking sheet.
  • Then top it with pizza sauce, slices mozzarella cheese, and tomatoes.
  • Sprinkle over dried basil and red pepper flakes.
  • Bake at 425°F for about 10-15 minutes or until the cheese is melted and starts to bubble.
  • Take the pizzas out of the oven, top with fresh basil leaves and serve.

Notes

  • I like to line a baking sheet with parchment pepper, so when the cheese melts and leaks, it won’t stick to the baking pan and will be easier to clean.
  • Preheat the oven ahead of time. The pizza will cook much faster and the cheese will melt better in the preheated oven.
  • If your tomatoes are very juicy, you can pat dry them with paper towel to absorb extra liquid, so the pizza won’t come out soggy.
