Ingredients

  • 1 large sweet potato peeled and diced
  • 4 cups Brussel sprouts cut in halves
  • 2 cups cherry tomatoes
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • ¼ cup grated parmigiano reggiano cheese optional

Instructions

  • Preheat the oven to 400°F.
  • Place diced sweet potatoes, Brussels sprouts, and cherry tomatoes on a medium baking sheet. Season with salt and pepper, add olive oil, and mix well.
  • Bake at 400°F for 30 minutes or until sweet potatoes are soft.
  • Top with grated parmigiano reggiano cheese. Skip this step if you are vegan or following a specific diet.
  • Serve warm.
