Ingredients

  • ½ cup unsalted butter room temperature
  • ¾ cup granulated sugar
  • 1 cup dark brown sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 3 cups rolled oats
  • 1 cup semisweet chocolate chips

Instructions

  • In a standing mixer, using a paddle attachment, beat together butter and granulated and brown sugar for a couple of minutes until light and fluffy.
  • Add eggs and vanilla extract and beat again until well combined.
  • Add flour and salt, and using a spatula, mix all the ingredients together.
  • Add rolled oats and chocolate chips and mix until evenly distributed.
  • Refrigerate the dough for an hour before baking. It will help the cookies to keep the shape and stay thicker.
  • Before baking, preheat the oven to 350°F, line a baking sheet with parchment paper and set aside.
  • To make cookies, scoop 3 tablespoons of dough, form it in a ball shape, and place on a baking sheet.
  • Bake at 350°F for about 20 minutes or until the edges are golden/brown color. Take them out of the oven and let them sit on the baking sheet for 10 minutes. Then remove to a write wrack.
  • You can keep the cookies in an air tight container for up to a week.
