- 1 large sweet potato peeled and diced
- 4 cups Brussel sprouts cut in halves
- 2 cups cherry tomatoes
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 2 tablespoons olive oil
- ¼ cup grated parmigiano reggiano cheese optional
Preheat the oven to 400°F.
Place diced sweet potatoes, Brussels sprouts, and cherry tomatoes on a medium baking sheet. Season with salt and pepper, add olive oil, and mix well.
Bake at 400°F for 30 minutes or until sweet potatoes are soft.
Top with grated parmigiano reggiano cheese. Skip this step if you are vegan or following a specific diet.
