Apple and Blueberry Crumble

Ingredients

Ingredients for the crumble:

  • ¾ cup old fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¼ cup light brown sugar
  • 6 tablespoons unsalted butter melted

Ingredients for the filling:

  • 4 large apples peeled, cored, and diced
  • 2 cups blueberries
  • 1 tablespoon lemon juice
  • 2 tablespoons light brown sugar
  • 2 tablespoons granulated sugar
  • 1 tablespoon all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon

Instructions

  • Preheat the oven to 350F.
  • In a mixing bowl, whisk together ¾ cup rolled oats, ¾ cup all-purpose flour, ½ tsp baking powder, ½ tsp cinnamon, ¼ tsp salt, and ¼ cup light brown sugar. Add 6 tbsp melted butter and mix everything together until it creates crumbs.
  • In a large baking dish, add 4 peeled, cored, and diced apples, 2 cups blueberries, 1 tbsp lemon juice, 2 tbsp light brown sugar, 2 tbsp granulated sugar, 1 tbsp all-purpose flour, ¼ tsp salt, and ½ tsp cinnamon. Stir until well mixed.
  • Top the filling with the crumbles.
  • Bake at 350F for about 40-50 minutes or until the apples are soft and the filling is bubbling.
  • Take it out from the oven and let it sit on the counter for about 10 minutes before serving.

Notes

  • Sweetness. The sweetness of the dessert will depend on what type of apples you use. This recipe is made with Honeycrisp variety, which has a medium sweetness. Please, adjust the amount of sugar accordingly, based on what type of apples you use (sweeter or tarter ones).
  • Filling. To make it easier, you can mix the filling ingredients right in the baking dish. This way, you will have one less bowl to wash!
  • How to store. You can refrigerate it in an air-tight container for up to 3 days.
  • How to serve. The best way to serve it is with a scoop of good quality vanilla ice cream (like French Vanilla Ice Cream), custard, or whipped cream.
    If you have some leftovers for the next morning, you can serve it cold with plain Greek yogurt. It will taste like the best parfait you’ve ever tried!
