One of my favorite desserts to make during the Summer and Fall are crumble and crisps. They are so easy to assemble and taste amazing!
This recipe for Apple and Blueberry Crumble is one of those desserts that you can quickly put together, bake, and serve. They apples come out nice and tender, and blueberries are so juicy. To balance the delicious filling, I made this buttery and crunchy streusel topping, packed with old-fashioned rolled oats, cinnamon, and butter.

Ingredients and Substitution
- Apples. In this recipe, I used Honeycrisp variety. If you decide to use tart apples, like Granny Smith, you can add an extra tablespoon of light brown sugar. If you are using a sweet variety, like Fuji or Gala, I would suggest to reduce the amount of sugar to balance the sweetness.
- Blueberries. Any blueberry variety will work in this recipe. Just make sure that the berries are fresh and not too mushy, or they will completely loose the shape while baking.
- Lemon juice. Fresh lemon juice helps to prevent the apples from browning too quickly and balances the sweetness of the dish.
- Sugar. For the filling, I like to use a mix of light brown and granulated sugar, which creates a perfect combo of caramelization and flavor.
- Oats. Old-fashioned rolled oats will work great in this recipe. I would not suggest to use quick oats, as they will get mushy and the crumble will loose the texture.
- Flour. Regular all-purpose flour will help to thicken up the sauce, so it won’t be too runny.
- Cinnamon. If you love good cinnamon aroma, feel free to add some more ground cinnamon for even more flavor.
- Salt. It helps to balance all the flavors.
- Butter. I prefer to melt the butter before adding to the dry ingredients. It makes it so much easier to mix all the ingredients.
How to make it
Preheat the oven to 350F.
In a mixing bowl, whisk together ¾ cup rolled oats, ¾ cup all-purpose flour, ½ tsp baking powder, ½ tsp cinnamon, ¼ tsp salt, and ¼ cup light brown sugar. Add 6 tbsp melted butter and mix everything together until it creates crumbs.
In a large baking dish, add 4 peeled, cored, and diced apples, 2 cups blueberries, 1 tbsp lemon juice, 2 tbsp light brown sugar, 2 tbsp granulated sugar, 1 tbsp all-purpose flour, ¼ tsp salt, and ½ tsp cinnamon. Stir until well mixed.
Top the filling with the crumbles.
Bake at 350F for about 40-50 minutes or until the apples are soft and the filling is bubbling.
Take it out from the oven and let it sit on the counter for about 10 minutes before serving.

- Sweetness. The sweetness of the dessert will depend on what type of apples you use. This recipe is made with Honeycrisp variety, which has a medium sweetness. Please, adjust the amount of sugar accordingly, based on what type of apples you use (sweeter or tarter ones).
- Filling. To make it easier, you can mix the filling ingredients right in the baking dish. This way, you will have one less bowl to wash!
