Ingredients and Substitution
- Dates. I prefer to use Medjool dates, because of their big size and sweet caramel-like flavor. Although, you can use any dates you can find in your local food store.
- Peanut butter. Try to use good quality butter that’s made with just peanuts and salt. It tastes a lot better than the one made with additives, plus it’s healthier.
- Peanuts. Roasted salted peanuts are my favorite, as they balance the sweetness of the dates.
- Chocolate. Good quality dark chocolate or chocolate chips are preferred.
- Coconut oil. We need just a teaspoon of coconut oil to make the melted chocolate smooth and shiny.
How to make it
Cut a slit in each date and remove the pits.
Fill each date with peanut butter and sprinkle some chopped peanuts on top of peanut butter.
In a mixing bowl, add chocolate chips and coconut oil, then melt until smooth consistency.
Working one at a time, dip the filled dates in melted chocolate to fully cover from all the sides, allowing the excess chocolate to drip back into the bowl.
Transfer them to a baking sheet with parchment paper and top with some extra chopped peanuts.
Refrigerate for about 30 minutes before serving.
How to melt chocolate
- Microwave. You can add chocolate and coconut oil in a microwave-safe bowl and heat it in a microwave in 20 seconds increments, stirring in between until fully melted and smooth.
- Double boiler. Fill a sauce pan with a few inches of water and bring it to simmer. Once simmering, reduce the heat to low. Add chocolate and coconut oil in a heat-proof bowl and place it on top of the sauce pan with simmering water. Stir often until the chocolate and melted and smooth.
Tips for best results
- Nut butter varieties. If you don’t like peanut butter, you can substitute it with almond, hazelnut, or cashew butter and roasted nuts.
- Chocolate. Use good quality chocolate bar or chips in this recipe. It makes a BIG difference.
- Dipping dates into chocolate. To make it easier to dip stuffed dates into chocolate, I like to pierce the dates with a toothpick, then dip into the melted chocolate, and using a teaspoon, pour over more chocolate to fully cover from all the sides.
