Mango Avocado Salsa

Ingredients

  • 2 mangoes diced
  • 1 avocado diced
  • cup red bell pepper finely chopped
  • ¼ cup red onion finely chopped
  • ¼ cup cilantro finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • ¼ teaspoon salt

Instructions

  • Dice mango, avocado, red bell pepper, red onion, and cilantro.
  • Transfer everything to the bowl. Add olive oil, lime juice, and salt.
  • Mix and serve!

Notes

  • Spice it up. If you like your salsa a bit spicy, you can add some finely chopped jalapeno or serrano peppers.
  • Make sure you use ripe mangoes, as they have more sweetness and juices.
How long does it keep? Because we have avocado in this recipe, it’s better to consume this salsa the same day. If you still have leftovers and need to refrigerate, I would suggest to add a bit more lime juice to it and mix. That will prevent the avocado from browning too fast. Transfer to an air-tight container and refrigerate overnight.
Can I use frozen mango? No. It’s better to use fresh and ripe fruit. If you use a frozen one, it will be too watery after defrosting.
