These No Bake Brownie Bites are rich, chocolatey, and naturally sweetened with Medjool dates and a little maple syrup. They taste like little brownie truffles, but they are made with simple ingredients like walnuts, almonds, coconut, and cocoa powder.
Put ½ cup walnuts and ½ cup almonds in a food processor and grind it until small pieces.
Then add 6 Medjool dates, ½ cup unsweetened shredded coconut flakes, ¼ cup cocoa powder, 1 tbsp water, 1 tbsp maple syrup, and a pinch of salt and mix it up again until combined with a texture similar to dough.
To make the balls, you can use a regular spoon or an ice cream scoop (1.5 tablespoon) to scoop the mixture and roll it into balls.
Place them on a plate or in a bowl, cover with plastic wrap and refrigerate for about an hour before serving.

Use soft, sticky Medjool dates. If your dates feel dry, soak them in warm water for a few minutes, then drain well before using.
Do not over-process the nuts before adding the dates. You want small pieces, not nut butter.
The mixture should hold together when pressed between your fingers. If it crumbles, add a little more water, 1 teaspoon at a time.
Use a small cookie scoop for even-size bites.
Chill the brownie bites before serving so they become firmer and easier to eat.
