Why This Recipe Works
This no bake brownie bites recipe works because the nuts, dates, coconut, and cocoa powder create a fudgy texture that feels like a brownie bite without needing flour, eggs, butter, or baking.
- Walnuts and almonds give the bites structure and a rich, nutty flavor.
- Medjool dates help bind everything together and add natural sweetness.
- Cocoa powder gives the mixture a deep chocolate flavor.
- A little water and maple syrup help the mixture come together into a soft dough you can roll.
Key Ingredients
You only need a few pantry-friendly ingredients to make these healthy brownie bites.
- Walnuts and almonds. These create the base of the brownie bites and add richness.
- Medjool dates. Dates naturally sweeten the mixture and help everything stick together.
- Unsweetened shredded coconut. Adds texture and a subtle coconut flavor.
- Unsweetened cocoa powder. This gives the bites their brownie-like chocolate flavor.
- Maple syrup. Adds a little extra sweetness and moisture.
- Water. Just a tablespoon helps the mixture stay moist and easy to roll.
- Salt. A small pinch balances the sweetness and brings out the chocolate flavor.
Substitutions and Additions
- Use different nuts. Try pecans, cashews, peanuts, or hazelnuts instead of walnuts or almonds.
- Add more chocolate flavor. Stir in a few mini chocolate chips after processing if you do not need the recipe to stay refined sugar-free.
- Roll them in toppings. Try extra cocoa powder, finely shredded coconut, or crushed nuts.
- Adjust the sweetness. If your dates are very sweet, you can use a little less maple syrup.
- Make them softer. If the mixture is dry, add a tiny splash of water until it holds together.
How to make No Bake Brownie Bites
All you need is a food processor and a few minutes to make the mixture. After rolling, chill the brownie bites so they firm up before serving.
Step 1: Add walnuts and almonds to a food processor. Pulse until they are broken into small pieces.
Step 2: Add Medjool dates, coconut, cocoa powder, water, maple syrup, and salt. Process again until the mixture looks like a soft dough.
Step 3: Scoop the mixture with a spoon or small cookie scoop, then roll it into bite-size balls.
Step 4: Place the brownie bites on a plate or in a bowl, cover, and refrigerate for about 1 hour before serving.
Expert Tips
- Use soft, sticky Medjool dates. If your dates feel dry, soak them in warm water for a few minutes, then drain well before using.
- Do not over-process the nuts before adding the dates. You want small pieces, not nut butter.
- The mixture should hold together when pressed between your fingers. If it crumbles, add a little more water, 1 teaspoon at a time.
- Use a small cookie scoop for even-size bites.
- Chill the brownie bites before serving so they become firmer and easier to eat.
What to serve with it
These no bake brownie bites are easy to serve as an afternoon snack, lunchbox treat, or small dessert after dinner. They are rich enough to satisfy a chocolate craving, but small enough to keep in the refrigerator for quick grab-and-go treats.
For a bite-size dessert tray, serve them with No Bake Energy Bites, Chocolate Bourbon Truffles, Coconut Truffles, or Chocolate Covered Dates.

Easy and yummy! Great for a small treat.
Great formula! I felt water was a little bit of a waste so I omitted water and the maple syrup and instead added a heaping tablespoon of coconut oil. And didn’t have flaked coconut but I did have chipped so I just blitzed it in and it was fine. Perfect for me!
I just made a batch of these and they are absolutely delicious! And saves you a lot of money too! I buy these or similar, from a local store for 2 euros each! Unbelievable how easy they are to make. Just one question though, what kind of flaked coconut is used? Is it the big flakes one or the one used for rolling cakes and coconut balls for example? Thank you. Keep it up! 🙂
Hi Essie! I’m so glad you liked the recipe. I used grated coconut. You don’t want it to be too big, or it might be too chewy.
Can these be frozen, and for how long?
Hi Elissa! Yes, you can freeze them for up to a month.
I needed something quick for book club, they were perfect. I made a double batch with raisins because I didn’t have dates. I will repeat with dates next. This recipe is a keeper!!
Thank-you!
Thank you, Jo! I’m so happy you liked them 😉

Hi there. What do you consider a single serving for these to get to 194 cal? I’m trying to figure out if it’s 1 ball or a few? Thanks so much!
Just made these today. Taste great. Not over sweet which I prefer. They’re currently chilling in the fridge, but not for long!
Thank you, Helen!
These brownies are so delicious. Thank you! Didn’t have dates and had to substitute with raisins. Can’t wait to make again.
Thank you so much, Anthony! I’m so glad you liked them!
I am making these for the second time! I love them! They are so nice and fishy but still healthy!
