Ingredients

  • ½ cup walnuts
  • ½ cup almonds
  • 6 Medjool dates
  • ½ cup unsweetened shredded coconut flakes
  • ¼ cup unsweetened cocoa powder
  • 1 tablespoon water
  • 1 tablespoon maple syrup
  • pinch of salt

Instructions

  • Put ½ cup walnuts and ½ cup almonds in a food processor and grind it until small pieces.
  • Then add 6 Medjool dates, ½ cup unsweetened shredded coconut flakes, ¼ cup cocoa powder, 1 tbsp water, 1 tbsp maple syrup, and a pinch of salt and mix it up again until combined with a texture similar to dough.
  • To make the balls, you can use a regular spoon or an ice cream scoop (1.5 tablespoon) to scoop the mixture and roll it into balls.
  • Place them on a plate or in a bowl, cover with plastic wrap and refrigerate for about an hour before serving.

    Great formula! I felt water was a little bit of a waste so I omitted water and the maple syrup and instead added a heaping tablespoon of coconut oil. And didn’t have flaked coconut but I did have chipped so I just blitzed it in and it was fine. Perfect for me!

    I just made a batch of these and they are absolutely delicious! And saves you a lot of money too! I buy these or similar, from a local store for 2 euros each! Unbelievable how easy they are to make. Just one question though, what kind of flaked coconut is used? Is it the big flakes one or the one used for rolling cakes and coconut balls for example?
