These No Bake Energy Bites with Dates and Nuts are the kind of healthy snack that makes busy days easier. They are naturally sweetened with Medjool dates and maple syrup, packed with almonds, walnuts, flax seeds, cranberries, and coconut, and easy to keep in the refrigerator for quick grab-and-go bites.
Put ½ cup almonds and ½ cup walnuts in a food processor and pulse it until roughly chopped.
Add chopped dates, 2 tbsp ground flax seeds, ⅓ cup dried cranberries and 1 tbsp maple syrup and process until the mixture starts to come together. If it is not sticky enough, add a teaspoon of water and pulse again.
Using an ice cream scoop (1 ½ tablespoon size) scoop and roll the mixture into the balls.
Roll the balls into ⅓ cup unsweetened shredded coconut flakes until coated from all sides.
Put them in on a sheet with parchment paper and refrigerate for an hour. Then transfer to an air tight container and store refrigerated.

Use soft Medjool dates. If they feel dry, soak them in warm water for a few minutes, then drain well before processing.
Pulse the nuts until roughly chopped, but do not process them into nut butter.
If the mixture is not sticky enough, add water 1 teaspoon at a time until it holds together.
Use a small cookie scoop or 1 ½ tablespoon scoop so the bites are evenly sized.
Keep them refrigerated so they stay firm and easy to grab during the week.
