How to choose the best avocados?
The best guacamole starts with perfectly ripe avocados. Here are a few tips to remember.
- When you grab avocados, make sure they are not too hard or too soft.
- If the stem is attached and you cannot easily remove it, this means that the avocado is probably underripe. When it’s ripe, the stem can be removed easily.
- If you are not planning to use them for the next few days, store them in the fridge until ready to use. This will prevent them from browning too fast.
- On the contrary, if you need to speed up the ripening process, you can place them in a brown bag together with an apple or a banana for 1-2 days.
How to make this recipe
Slice the avocados in half and remove the pit. Scoop the flesh into the bowl, and using a potato masher or a fork, mash them to your desired consistency.
Add ½ cup finely chopped red onion, 1 seeded and chopped jalapeno, 2 seeded and diced Roma tomatoes, and ½ cup chopped cilantro.
Add ½ teaspoon salt and lime juice, then mix everything together and serve.
Tips for Best Results
- Make sure your avocados are perfectly ripe without any bruises. If they have some brown spots, just scoop them off and use the rest of the avocado.
- Since the tomato flesh is often watery and too soft, I like to scoop it out before dicing.
- I find that using a potato masher makes the mashing process easier and faster. You also can use a regular fork or a pastry cutter.
- Use only FRESH lime juice! Bottled juice will not work in this recipe.
Options and Substitutions
- I prefer to use red onion in this recipe. Although, you can easily substitute it with white onion.
- Classic guacamole is made with cilantro. But for those of you who doesn’t like the taste of cilantro, you can use flat parsley. It will slightly change the flavor, but will still taste good.
- If you cannot find jalapeno in the store, you can use a serrano pepper.
- As a variation, you can also add some minced garlic for additional flavor.
Frequently Asked Questions
You can keep it in an air-tight container the refrigerator for a couple of days.
Yes, you can make it ahead and keep in the fridge until ready to serve. However, it tastes best when served within 24 hours of making.
There are 2 ways to prevent it from browning:
1. Transfer guacamole to an air-tight container, place a plastic wrap directly over the surface, pushing out the air. Then close with the lid and refrigerate.
2. Transfer to an air-tight container, press down, pour a little bit of water to cover (it will not absorb the liquid). Then cover with the lid and refrigerate. To serve, pour off the liquid, and stir. You also might want to add a spritz of lime juice to freshen it up.

I made the Simple Guacamole just as the recipe said and it was delicious! I forgot and did not seed my tomatoes but it was still delicious and a great fasting food. I also baked my own chips from whole wheat tortilla shells!

I love Guac, but next time I will not use the lime. Didn’t really care for the taste. I like lime by itself but not in guac.

I love the texture of your guacamole. Some people make it too smooth. Thanks for the tips on how to stop the avocado browning. That’s always been a problem for me!

You made the guac just the way we like it — junky. And I LOVE the idea of adding lime to it instead of lemon. I’m making this recipe on game day. I know I’ll have to make a lot because it will go fast.

I’m a huge guacamole fan. I make it a lot for breakfast at the weekend, it goes very well with poached eggs. I’ve not tried adding yet jalapeno yet and tend to stick to standard long red chillis. Can’t wait to give this a try.

That is a great looking guac, my friend. My boys like a smooth guacamole but this one is more my style. I love it with cilantro and bits of tomato.
