Why this recipe works
Usually restaurant fries are made by cooking it in hot (low quality) oil, which makes it oily and greasy.
We are going to bake our potatoes in the oven, using just a little bit of olive oil and spices. This will significantly reduce the amount of calories and will make these fries much healthier.
Also, by baking them in a single layer, they will be perfectly crispy!
What potatoes to choose
For the best results, it’s better to use Russet potatoes. They will have perfect crispy edges without becoming mushy.
If you don’t have them on hand, you also can use Yukon potatoes. Though, they won’t have the same hearty texture.
How to bake fries in the oven
Preheat the oven to 400°F. Line a baking pan with parchment paper and set aside.
Peel the potatoes, rinse and thoroughly dry them.
NOTE: Drying potatoes is a very important step. If you skip it, you will end up with soft and mushy fries. I like to dry them with paper towel, or you also can do it with a clean linen kitchen towel.
Cut potatoes into fries and place on a baking sheet.
Add Cajun seasoning and olive oil and mix it up, evenly distributing (Photos 1-4).
Put them in a single layer. That will help them to crisp up on the bottom.
Bake at 400°F for about 30-40 minutes or until the fries are cooked and crispy.
Serve immediately.
Tips for best results
Drying. This is the crucial step in making fries. It will ensure the potatoes stay crispy. If you skip this step, you will have too much moisture and the potatoes will be soft and mushy. I usually dry them with a paper towel, but you also can dry with a clean linen kitchen towel.
Cutting. I like to cut fries a bit thinner because they will cook faster and they will be crispier. If you like your potatoes thicker, just make sure that you bake them a little bit longer. Also, try to slice them into even sizes, so they will bake evenly.
Single layer. It’s important to put the fries in a single layer on the baking sheet. That will help them get a perfect crisp.
Baking Time. Baking time depends on how thick you slice the potatoes and how crispy you want them to be. The potatoes will be cooked in about 25 minutes, but we need to keep them in the oven for additional 10-15 minutes to crisp them up. Start checking on them at about 30 minutes and continue baking until desired crispiness.
Options and Substitutions
Seasoning. I always use my Cajun seasoning. You can also play around and use your favorite spices, or simply just salt and pepper.
Skin. I prefer to peel my potatoes but it’s totally up to you. If you want to leave the skin on, just make sure you thoroughly wash and scrub the skin before cutting.

This recipe rocks! I did slightly different, but perfect turn out!
After drying I elected for a seasoned cast iron pan, and some penut oil vs other oils. Seasoning I did lemon pepper, after initial 25 minutes I flipped/salted and turned oven off and let them sit 10 minutes. Highly reccomend. The drying part matters, from years of experience!
Some folks soak in sugar water to de-starch at least 4 hours- then pat dry. This also gives an amazing french fry!
