When I was a child, I didn’t like to eat my vegetables. I guess I wasn’t the only one! They tasted plain and boring to me. Whatever my mom did to trick me, didn’t work; all the vegetables were lonely and left on an empty plate, untouched.
Today, I not only appreciate the taste of these delicious roots and plants, but also their nutritional value. Though, I mostly post dessert recipes on this blog, trust me, those are not my daily diet. The majority of our everyday meal consist of grains and vegetables. I think it is time for me to post some healthy recipes on this blog and share with you some of my favorite healthy vegan dinner ideas.
Roasted vegetables in the oven are my number one, healthy 30 minutes meal ideas. I like to mix different veggies, though my favorite combo is Brussel sprouts, sweet potatoes, and cherry tomatoes. It is a perfect combination of sweet and tart flavors.
During the busy nights, I like to keep it simple and serve my veggies with pasta, grilled chicken, or grains (like barley, buckwheat, or rice). Also, I usually make some extra to have leftovers for next day lunch.

Brussel Sprouts are very popular on the American traditional table during the holiday season, especially for Thanksgiving and Christmas.

Sheet Pan Roasted Vegetables
Ingredients
- 1 large sweet potato peeled and diced
- 4 cups Brussel sprouts cut in halves
- 2 cups cherry tomatoes
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons olive oil
- 1/4 cup grated parmigiano reggiano cheese optional
Instructions
- Preheat the oven to 400°F.
- Place diced sweet potatoes, Brussels sprouts, and cherry tomatoes on a medium baking sheet. Season with salt and pepper, add olive oil, and mix well.
- Bake at 400°F for 30 minutes or until sweet potatoes are soft.
- Top with grated parmigiano reggiano cheese. Skip this step if you are vegan or following a specific diet.
- Serve warm.
