Why you will love it
There are so many reasons why you will love Marble Brownies recipe and will make it again and again! Here are a few:
- Rich and fudgy brownie layer is absolutely scrumptious!
- The cheesecake layer is so light and creamy, it perfectly balances the chocolate flavor.
- Super easy to make (even your kids can make it!).
- The swirls make this dessert so pretty and festive; it will be great for a party or the holiday season!
How to make it
Preheat the oven to 350°F. Grease a 9×9-inch baking pan and line with parchment paper, then set aside.
In a mixing bowl, put together chocolate chips (or a chopped chocolate bar) and cubed butter. Melt in 30 second increments in the microwave, stirring in between. (Photos 1-4)
When done, mix it well and add granulated sugar. You want to whisk it very well, so the sugar dissolves. Then add eggs and vanilla extract and whisk again. (Photos 5-10)
Add all-purpose flour and sift coco powder, fold it in. (Photos 11-13)
Scoop out about ¼ cup of the mixture in a separate small bowl and set aside. (Photo 14)
In another mixing bowl, using a hand mixer, beat together cream cheese and sugar, until light and fluffy. Add an egg and vanilla extract and beat again. (Photos 15-20)
Pour the brownie layer in a pre-greased baking pan, and using a spatula, spread evenly, trying to keep the same thickness on all sides. (Photos 21-22)
Pour the cheesecake layer on top and spread it evenly as well. (Photos 23-24)
In a small bowl with the remaining brownie mixture, pour 1 tablespoon of water and mix very well until smooth. (Photos 25-26)
Dollop the brownie batter over the cheesecake layer. Using a toothpick or a tip of a knife, make the swirls. (You can watch the video tutorial for visual details). (Photos 27-28)
Bake at 350°F for about 30 minutes.
When done, take it out of the oven and let cool completely, then cut in 12 squares.
Tips for Best Results
- I like to use bittersweet chocolate bar in this recipe for richer flavor. You also can use semi-sweet variety.
- Also, it’s important to use high-quality ingredients, like chocolate and cream cheese. These are the stars of the show.
- Make sure that you use room temperature ingredients (especially for cheesecake layer), so they mix well and don’t separate.
- When you add cocoa powder, it’s better if you sift it, so you don’t end up with clumps.
- To make the perfect swirls, use a wooden toothpick or the tip of a knife.
Frequently Asked Questions
The trick to have more fudgy brownies is to have a higher fat ratio vs flour ratio. In this recipe we use more butter and chocolate then flour, which helps to get more dense texture.
Yes! If you decide to double it, you can bake it in 9×13-inch baking pan. The layers will be a bit thinker, so you might want to keep it in the oven for 2 minutes longer.
You can refrigerate it in an air-tight container for up to a week.
If you want to freeze them, it better if you wrap each piece individually with plastic wrap and place them in a reusable bag, then put in the freezer. They will stay fresh for up to 2 months. You can thaw them overnight in the fridge or on the counter at the room temperature.
