These are simple Roasted Cherry Tomatoes that come out perfect every single time! Cooked with balsamic vinegar, herbs, and spices, it makes a perfect addition to any meal.

This recipe for Roasted Cherry Tomatoes is so delicious, easy to make, and very versatile. It’s cooked in the oven with balsamic vinegar that provides sweetness and depth to the dish, herbs and seasoning for more flavor, and red pepper flakes to spice it up. This simple recipe will be a great compliment to any dish, from pasta or pizza, to chicken or fish.

While I love to use fresh tomatoes in recipes like Cherry Tomato Bruschetta, Orzo Pasta Salad, and Simple Guacamole, roasted tomatoes give a totally different depth of flavor and can elevate any “boring” dish.

  • Easy to make. It takes 5 minutes to prep everything in a baking dish and put in the oven to roast.
  • Lots of flavors. Balsamic vinegar adds deep rich flavor with sweet notes, and red pepper flakes add some heat to the whole dish.

How to make it

Wash and dry the tomatoes, then cut in half lengthwise.

Place on a baking pan and add olive oil, balsamic vinegar, fresh thyme, garlic powder, salt, black pepper, and red pepper flakes. Mix everything and spread evenly, so they are all in one layer.

Bake at 400°F for 25-30 minutes.

Tips for best results

  • Tomatoes. You can use cherry, grape, or any small varieties of tomatoes in any color in this recipe.
  • Garlic. I prefer to use garlic powder in this recipe, because it’s milder and just adds a hint of aroma. You can also use fresh garlic, just mince or finely chop it before adding to the dish.
  • Herbs. If you don’t have fresh thyme on hand, you can use other herbs, like oregano, basil, rosemary. Dried herbs will work too.
  • Red Pepper Flakes. I like my roasted tomatoes to be a bit spicy. If you don’t like spicy food, you can skip this ingredient.

How to use roasted tomatoes

There are so many ways you can use this recipe. Here are a few of my favorite ideas:

  • Pasta. You can just top your pasta with these tomatoes or blend the tomatoes into a sauce.
  • Polenta. I like to top polenta with roasted tomatoes, broccoli, and some extra Parmesan cheese.
  • Pizza. This recipe will be great for a homemade pizza sauce!
  • Crostini/Bruschetta
  • Chicken, fish, or red meat

  • 3 cups cherry tomatoes halved
